Bluefin Tuna, Pickled Veggies & Mustard Aioli

Ingredients

Pickled Veg

  • 1 cup red wine vinegar

  • dash fennel seeds

  • dash caraway

  • 5 cloves garlic

  • 2 cups chopped veg of your choice (carrot, pepper, cauliflower)

Mustard Aioli

  • 2 oz Yellow mustard (or mustard of your choice, this is all I had)

  • 2 egg yolks

  • red wine vinegar

  • 4oz EVOO

Tuna

  • 6-10oz raw, defrosted bluefin tuna (per serving)

  • salt

Directions
  1. Combine vinegar, spices, garlic and bring to a boil

  2. Chop veg about matchstick size

  3. pour hot liquid into jar with chopped veg

  4. add dash of salt

  5. close lid, shake and set aside

  6. Combine egg yolks, mustard, vinegar and pinch of salt

  7. whisk together

  8. slowly add oil while whisking

  9. fold or roll up tuna and tie to hold together

  10. heat oil in pan

  11. fry one side at a time, about 45 seconds each

  12. remove and cut moderately thinly
