INTRO
Tartare is a delicious delicacy that you can make with several types of protein. In my video I used venison, but feel free to use a high quality meat of your choosing. Remember to wash your hands thoroughly before and after handling the meat.
INSTRUCTIONS
- Place your protein (~6 oz) the freezer for about 15 mins
- Finely dice your shallot and chilis
- Combine with the red wine vinegar and set aside
- Finely dice your protein
- Add your mignonette mixture into your diced meat and combine
- Top with diced avocado and egg yolk and gently stir
- Serve it cold with a chia seed cracker and enjoy!
INGREDIENTS
- 6oz protein
- 4 tbsp. red wine vinegar
- 1 tbsp. spicy mustard
- 1 shallot
- 1-2 Fresno chillies (this is a nice medium-mild spice chili)
- Fresh herbs (thyme, parsley, dill or whatever you have)
- 2 tbsp. Capers
- 1/2 avocado
- 1 egg yolk
