(Not) Ramen

My (not) Ramen is a spin on a classic Japanese dish, with a few key changes to fit a healthy, low-carb lifestyle. The "yam noodles" or Konjac noodles popular  in Japan as a diet food and they're a great option for our rich, savory soup.

Ingredients

  • Smoked pork Belly
  • 1 pack "yam noodles" or "Konjac noodles".
  • 10 shiitake mushrooms
  • 1/2 bunch asparagus
  • 2 miso truffles (coming soon)
  • 1 Ramen Bone Broth ( I'm partial towards Nate's Bone Broth, but use what you like)
  • 1 Jalapeño
  • 1/2 bunch cilantro
  • 1 pack seaweed (however much you like)

Makes 2 servings
